Quiche with French brie and onion confit (whether or not home made):
- Boil 2 big potatoes (this time, I used the Cornes de Gattes) and let it cool. Then cut in thin slices.
- Spread the roll puff pastry (I always buy a ready one) in the plate, cover it with the potatoes, the onion confit and fine-cut bresaola (or like I did today: I took a mix of Bayonne and Parma bacon – about 150 gr.).
- Mix 4 eggs with a little bottle of cream, add some pepper and salt (but be careful with the quantity of the salt, since the bacon is already containing quite some salt!!) and cover the potatoes, onion confit and bacon with it.
- Cut 250 gr Brie de Meaux (just à point and thus, a pretty sticky stuff) in thin slices and put it on the pastry and sprinkle some thyme over it.
- Put it in the preheated oven and let it bake for about 50 minutes.
I think that next time, I will try to make it with Reblochon cheese.

Quiche mit französischem Brie und Zwiebelkonfitüre

Zwei große gekochte und ausgekühlte Kartoffel in Scheiben schneiden ( Cornes de Gattes oder auch Bamberger Hörnchen )

Eine Form mit gekauftem Blätterteig oder Pastetenteig auslegen. Mit den Kartoffelscheiben, der Zwiebelkonfitüre ( fertig gekauft ) und fein geschnittenem Bresaola belegen. Man kann auch einen Mix aus ca. 150 g Bayonne – und Parmaschinken nehmen.

4 Eier mit einem kleinen Becher Sahne verquirlen, pfeffern und vorsichtig salzen, da der Schinken schon Salz enthält. Die Kartoffeln, den Schinken und die Zwiebelkonfitüre damit übergießen.

250 g reifen Brie de Meaux in dünne Scheiben schneiden, auf die Kartoffel Masse legen und mit etwas Thymian bestreuen.

Die Form in den vorgeheizten Ofen schieben und ca. 50 Minuten bei 180 Grad backen.

Anstatt Brie de Meaux kann man auch einen schönen Reblochon nehmen
